Stroopwafel Corn Fritters
Ingredients (preparation time 10 minutes, makes 12 quarter-size fritters)
- 1 cup corn (frozen or fresh, cut from the cob)
- 1 large stroopwafel, coarsely chopped
- ¼ cup flour
- ½ tsp baking powder
- 1 egg
- 2 Tbsp milk
- Pinch salt
- Pinch cayenne
- 2 cups canola oil
In a small bowl, mix together all ingredients except for the oil until you have a loose batter.
Heat oil over medium-high heat to 375 degrees. When hot enough, spoon in corn batter and fry. When sides turn golden brown (about two minutes) flip and fry on the other side for another minute.
Remove immediately and drain on paper towels. Continue with remaining batter.
Serve fritters immediately with hot sauce and/or maple syrup for dipping.
